Artichokes are a perennial with edible flower buds. Early summer stalks bear artichoke buds. Nutty flavor when steamed, boiled, baked or grilled. If left unharvested, open into a vibrant thistle-like bloom. Full sun vegetable. Grows well in Auburn, Citrus Heights, Elk Grove, Folsom, Rocklin, Roseville and Sacramento.

Plant in enriched garden soil 1-2 weeks after last frost. Leave 6′-8′ of space between each plant. Fertilize when transplanting and when flowers are about to bloom. Plants are dormant in summer and usually begin blooming in fall. Water early morning or late evening. Harvest globes when they reach 4″ for best flavor.
